Indianapolis Hospital Making Its Meals Healthier Via Fresh and Lower-Sodium Foods
Eskenazi Health in Indianapolis is betting a change in its menus can improve health beyond the hospital doors. Eskenazi used a Centers for Disease Control grant to cut the sodium content in its meals by more than a third. Food services director Tom Thaman says the hospital has changed not its menu, but the food it purchases to prepare those items. For instance, Eskenazi discovered the chicken it was ordering was packed in sodium when it was shipped.
